Split the croissants in half and place them cut-side up.
Spread the cranberry sauce over one half of each croissant and top with the prosciutto.
Arrange the sliced Brie over the other croissant halves.
Place the croissant halves in the air fryer basket, working in batches if necessary.
Air fry for 5 minutes at 180°C, until the Brie has melted and the prosciutto is lightly crisp.
Remove the croissants from the air fryer.
Add the rocket, close the croissants and serve immediately while warm and crisp.
