Instructions
In a large skillet, heat olive oil over medium-high heat.
Cook the chicken for 3-5 minutes on each side until browned and cooked through.
Remove the chicken from the skillet and set aside on a plate.
In the same skillet, add heavy cream, chicken broth, garlic powder, Italian seasoning, and Parmesan cheese.
Whisk over medium-high heat until the sauce starts to thicken.
Add the chopped spinach and sun-dried tomatoes to the skillet and let it simmer until the spinach starts to wilt.
Return the chicken to the skillet and coat it with the creamy garlic sauce.
Serve hot over pasta if desired.
