Preheat the air fryer to 180°C (356°F) for 3 minutes.
Combine the cooled pumpkin risotto, breadcrumbs, Parmesan, egg, salt, and black pepper in a mixing bowl.
Mix until the ingredients are evenly incorporated.
Divide the risotto mixture into 12 equal portions.
Firmly shape each portion into a ball approximately the size of a golf ball.
Arrange the risotto balls in the air fryer basket in a single layer.
Leave space between the balls and cook in batches when necessary.
Lightly coat the risotto balls with olive oil spray.
Air fry for 12–15 minutes until crisp and golden brown.
Turn the balls carefully halfway through the cooking time.
