Combine the cooled risotto, Parmesan, mozzarella, sun-dried tomatoes, and bush tomato powder in a mixing bowl.
Mix until the cheese and seasonings are evenly distributed.
Divide the mixture into 12 equal portions and firmly shape each portion into a ball.
Dip each risotto ball into the beaten eggs and allow the excess to drip away.
Roll each ball in the breadcrumbs until evenly coated.
Preheat the air fryer to 200°C (390°F) for 3 minutes.
Arrange the arancini in the air fryer basket in a single layer, leaving room for airflow.
Lightly coat the arancini with olive oil spray.
Air fry for 12–15 minutes, turning halfway through, until crisp and golden brown.
Transfer the arancini to a serving plate and let them cool for 3 minutes.
