Instructions
Heat the oil in a cast-iron skillet until sizzling, then add the ground chicken and cook for 3-4 minutes, crumbling with a fork.
Season with salt and pepper.
Stir in the scallions, garlic, and cabbage, and sauté for an additional 4 minutes.
Remove from heat, add soy sauce and mustard, and stir to combine.
Place 1-2 tablespoons of filling in the center of each egg roll wrapper.
Roll the corner over the filling, brush with water, fold in the sides, and continue rolling to seal.
Preheat the Air Fryer to 375°F.
Arrange egg rolls in the Air Fryer, working in batches, and cook for 13-16 minutes, turning halfway.
Combine all dipping sauce ingredients in a mixing bowl.
Serve the egg rolls warm with the dipping sauce.
