Combine the crocodile meat, soy sauce, sesame oil, and cornstarch in a mixing bowl.
Toss until the meat is evenly coated.
Cover and marinate for 15 minutes.
Heat a skillet over medium heat.
Lightly coat the skillet with cooking spray.
Add the garlic and ginger.
Cook for 30 seconds until fragrant.
Add the marinated crocodile meat.
Stir-fry until the meat is lightly browned.
Add the cabbage, carrot, and bean sprouts.
Stir-fry for 2–3 minutes until slightly softened.
Add the oyster sauce, hoisin sauce, and spring onions.
Stir until everything is evenly combined.
Remove the skillet from the heat.
Let the filling cool for 10 minutes.
Place one spring roll wrapper on the work surface.
Spoon ¹⁄₁₂ of the filling near one corner.
Fold the sides over the filling.
Roll the wrapper tightly.
Seal the final edge with water.
Repeat with the remaining wrappers and filling.
Preheat the air fryer to 356°F (180°C) for 3–5 minutes.
Lightly coat the spring rolls with cooking spray.
Arrange them in the air fryer basket in a single layer.
Cook in batches if necessary.
Air fry for 8–10 minutes.
Turn the spring rolls halfway through cooking.
Remove them when crisp and golden brown.
Let them cool for 3 minutes before serving.
