Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove as much moisture as possible.
Add the zucchini, carrot, corn, green onions, and parsley to a mixing bowl.
Add the beaten eggs and stir until combined.
Add the flour, baking powder, garlic powder, paprika, sea salt, and black pepper.
Mix until the vegetables are evenly coated and the mixture holds together.
Heat the vegetable oil in a large skillet over medium heat.
Spoon portions of the vegetable mixture into the skillet and gently flatten them into small fritters.
