Crispy vegetable fritters packed with zucchini, potato, carrots, and green peas in a lightly spiced dairy-free batter. Golden outside and tender inside, they make an easy snack, side dish, or light lunch.
Squeeze as much moisture as possible from the grated zucchini and potatoes. Place the zucchini, potatoes, carrots, peas, flour, non-dairy yogurt, 60 ml canola oil, non-dairy milk, paprika, cayenne pepper, salt, and black pepper in a large mixing bowl. Stir until a thick, evenly combined batter forms.
Heat approximately 6 mm of canola oil in a frying pan over medium-high heat. Divide the batter into 8 equal portions. Spoon several portions into the hot oil and gently flatten them into fritters without overcrowding the pan.
Fry for 5 to 7 minutes until the undersides are crisp and golden brown. Carefully turn the fritters and cook for another 5 to 7 minutes until golden, crisp, and cooked through. Repeat with the remaining batter as necessary.
Transfer the cooked fritters to paper towels to drain excess oil. Serve immediately while hot and crisp.
