Crispy Parmesan Polenta Chips have a golden crunchy outside and a soft, cheesy centre. The polenta is cooked with stock, butter, and Parmesan, chilled until firm, then coated with extra cheese and crisped in the air fryer.
Bring the chicken or vegetable stock to a boil in a large deep saucepan.
Slowly pour in the polenta while whisking continuously.
Reduce the heat to low once the mixture returns to a boil.
Cook for 10 minutes, stirring regularly, until the polenta becomes soft and thick.
Stir in the butter and 1/2 cup Parmesan until combined.
Grease a cake pan 20 cm and line the base and sides with parchment paper.
Pour the polenta mixture into the prepared pan and spread it evenly.
Cover and refrigerate for 3 hours until firm.
Preheat the air fryer to 200°C for 3 minutes.
Turn the chilled polenta out of the pan and cut it into 20 chips.
Place the chips on a tray.
Coat the chips with the remaining Parmesan.
Spray them generously with cooking spray.
Lightly spray the air fryer basket with cooking spray.
Arrange the polenta chips in the basket without overcrowding.
Air fry for 15 minutes, turning halfway through, until golden and crisp.
Sprinkle with sea salt flakes and serve hot.
