Combine the cornstarch, salt and black pepper in a mixing bowl.
Add the tofu cubes.
Toss gently until evenly coated.
Heat 2 tablespoons of vegetable oil in a large frying pan or wok over medium-high heat.
Arrange the tofu in a single layer.
Cook for 8 to 10 minutes.
Turn the cubes regularly until crisp and golden on all sides.
Transfer the tofu to a plate.
For the Pineapple Glaze
Whisk the pineapple juice, rice vinegar, soy sauce, brown sugar, ketchup, cornstarch and sesame oil in a bowl.
Continue whisking until no cornstarch lumps remain.
Set the glaze aside.
For the Vegetables
Add the remaining tablespoon of vegetable oil to the pan.
Add the red bell pepper, green bell pepper and red onion.
Stir-fry for 4 to 5 minutes until lightly browned but still crisp.
Add the garlic, ginger and optional red pepper flakes.
Stir-fry for 30 seconds.
Add the pineapple chunks.
Cook for 1 minute.
To Finish
Whisk the prepared glaze once more.
Pour it into the pan.
Bring the mixture to a gentle simmer.
Cook for 2 to 3 minutes until thick and glossy.
Return the crispy tofu to the pan.
Fold gently until every piece is coated.
Cook for 1 more minute.
Remove the pan from the heat.
Garnish with spring onions and optional sesame seeds.
Serve immediately.

Pressing and thoroughly drying the tofu helps the cornstarch coating become crisp. Keep the tofu pieces in one layer while frying. Cook them in two batches if your pan cannot hold them comfortably.
