Combine the soy sauce, 1 teaspoon vegetable oil, toasted sesame oil, and minced garlic in a small bowl.
Arrange the maitake mushrooms in approximately a single layer in the air fryer basket.
Drizzle the soy sauce mixture evenly over the mushrooms.
Air fry at 150°C for 10 minutes.
Sprinkle the mushrooms with flaky sea salt, sesame seeds, and fresh thyme.
Drizzle with the remaining 2 teaspoons vegetable oil.
Air fry for another 5 minutes until the edges are browned and crisp and the centres are tender.
Transfer the mushrooms to serving plates.
Serve immediately while hot and crisp.
