Crispy Tomato Quesadillas combine golden flour tortillas with juicy tomatoes and melted cheese. Prepared quickly in the air fryer, they make an easy vegetarian lunch, appetizer, or family-friendly snack.
Preheat the air fryer to 180°C (356°F) for 3 minutes.
Place 4 tortillas on a clean work surface.
Divide the shredded cheese evenly among the tortillas.
Leave a small border around the edge of each tortilla.
Distribute the drained tomatoes evenly over the cheese.
Add any optional fillings if desired.
Place the remaining tortillas on top.
Press the quesadillas gently to secure the fillings.
Lightly coat both sides with olive oil spray.
Place one quesadilla in the air fryer basket.
Air fry for 4–5 minutes until golden and crisp.
Turn carefully halfway through cooking.
Repeat with the remaining quesadillas.
Transfer each quesadilla to a cutting board.
Rest for 1 minute before slicing into wedges.
Serve warm with salsa or another dipping sauce.
