Heat the extra-virgin olive oil in a large saucepan over medium heat.
Add the parsnips, carrots, potatoes, garlic, and shallot.
Cook for 5 minutes, stirring occasionally.
Pour in the dry white wine.
Cook for another 3 minutes to reduce the wine slightly.
Add the curry powder, sea salt, and black pepper.
Stir for 1 minute until the spices become fragrant.
Pour in the coconut milk.
Add the pumpkin purée and 2 cups of water.
Stir until the pumpkin is incorporated into the liquid.
Add the bay leaves and push them beneath the vegetables.
Cover the saucepan and reduce the heat to low.
Simmer for 15 minutes, stirring occasionally.
Remove and discard the bay leaves.
Combine the tamarind paste with 1 tablespoon of water.
Stir the diluted tamarind into the stew.
Continue simmering uncovered for 10 minutes until the vegetables are tender and the sauce has thickened slightly.
Taste and adjust the seasoning if necessary.
Serve the stew hot.
