Instructions
In a medium-size bowl, combine the mayonnaise, vinegar, curry powder, pepper, salt, raisins, peanuts, and scallions, if using.
Add the crumbled tofu and stir until well combined.
Chill before serving.
Use as a sandwich filling or as a side dish.
