Dijon “Maple”–Glazed Chook

erythritol sweetener

olive oil

approximately 1.2kg whole chicken

small clementine mandarin
quartered
Instructions
Preheat air fryer at 180°C for 3 minutes.
In a small bowl, combine butter, mustard, salt, pepper, nutmeg, erythritol and maple extract.
Rub oil over and inside chicken.
Sprinkle chicken with seasoning mixture.
Stuff clementine into the chicken’s cavity.
Place chicken in ungreased air fryer basket.
Cook for 10 minutes.
Flip chicken.
Cook for another 10 minutes.
Flip chicken and cook for an additional 8 minutes.
Using a meat thermometer, ensure internal temperature is at least 75°C.
Transfer chicken to a cutting board and let rest for 5 minutes.
Once cool enough to handle, split in half by cutting down the spine.
Serve warm.
