Dijon Pork Crusted Cod
The pork rinds lend a crunchiness and a “bready” quality — without the carbs. You can find pork rinds in a variety of flavours, so don’t be afraid to experiment or to even make your own by crushing your own pork rinds.

Dijon mustard

fresh lemon juice

butter
melted

170 gram cod fillets
Instructions
Preheat air fryer at 180°C for 3 minutes.
In a small bowl, combine pork rinds, salt, mustard, lemon juice and butter.
Press mixture evenly across tops of cod fillets.
Place cod in air fryer basket lightly greased with olive oil.
Cook cod for 10 minutes until opaque and flakes easily with a fork.
Transfer fillets to two medium plates and serve warm.
