Notes & Wine Advice
Recipe Notes
Use very ripe bananas for the best flavor and a naturally sweeter banana bread. Bananas with plenty of brown spots are ideal.Mix the batter only until the ingredients come together. Overmixing can make the finished bread heavier instead of soft and tender.Tossing the walnuts and white chocolate with a little flour helps distribute them throughout the batter instead of letting them sink to the bottom.Check the centre with a toothpick before removing the bread from the air fryer. Then, allow it to cool before slicing so the soft crumb can set.
Wine Advice
A sweet Banyuls pairs beautifully with the cocoa, banana, walnuts, and white chocolate. Its rich fruit character makes it especially suitable when serving the bread as dessert.
