Eggplant adds creaminess to the sandwich making it more delicious. When serving, you can complement it with salad or fries.

Ingredients

small eggplant
cut into ¼" slices

Salt and ground black pepper

divided olive oil

loaf flatbread
cut into 4 horizontal slices

sliced and drained jarred roasted red bell peppers

shredded mozzarella cheese

Instructions
In a bowl, put the eggplant, then sprinkle it with pepper and salt.
Set the eggplant aside for about 2 minutes to allow blending of the flavors.
On a frying pan with oil, sauté the eggplant for about 3 minutes on every side.
Preheat your panini press.
On a flat surface, place the bread, then layer aside with the red pepper, eggplant, and cheese.
Top the ingredients by spreading ½ oz.
of the garlic on the other bread piece.
Cover the sandwich.
Grill it for about 6 minutes until the cheese gets to melt.
