Instructions
Melt the lard in a cast-iron skillet over medium-high heat.
Add the ground beef and cook for 4 minutes, crumbling with a spatula, until no longer pink.
Transfer the ground beef mixture to a baking pan.
Add the chili powder, ground bay leaf, ground pepper, sea salt, and chopped bell peppers.
In a mixing bowl, whisk together the eggs and double cream.
Pour the mixture over the beef and peppers in the baking pan.
Preheat the Air Fryer to 355°F.
Place the pan in the Air Fryer and cook for 10 minutes.
Top with shredded Colby cheese and tomato slices.
Cook for an additional 5 minutes, or until the eggs are golden and the cheese has melted.
Serve warm and enjoy!
