Fried Artichoke Hearts
Because the artichokehearts have already been softened and seasoned with salt and citrus from thelemon, it doesn’t take much to flavour these fried vegetables. Serve as a sideor atop a salad for a delicious change of pace.

artichoke hearts in water

Instructions
Preheat air fryer at 180°C for 3 minutes.
In a medium bowl, whisk together egg and Dijon mustard.
In a separate shallow dish, combine pork rinds and almond flour.
Dip artichoke hearts in egg mixture, then coat in pork rind mixture.
Place half of prepared artichoke hearts in ungreased air fryer basket.
Cook for 7 minutes.
Transfer to a large serving plate and repeat cooking with remaining artichokes.
Serve warm.
