Ingredients

  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped parsley
  • 4 tablespoons of honey
  • 4 cups of eggplants
  • Black pepper to taste
  • Salt to taste

Instructions

  • Take a large saucepan.
  • Add the olive oil into the pan.
  • Add the eggplant slices into the pan.
  • Fry the eggplant slices till they turn brown on all sides.
  • Add the salt and black pepper on the peppers.
  • Mix well.
  • Add the honey and chopped parsley on top of the eggplants.
  • The dish is ready to be served.
