Fried Tomato Slices
For a small table-full of eaters (this requires a lot of hustling for the cook)!

Ingredients

firm
almost ripe tomatoes

egg beaten
▢

Tbsp.
milk
▢
1
cup
cracker crumbs
▢
¼
cup
lard
butter, or margarine
▢
salt and pepper to taste
Instructions
Slice tomatoes into ¾” slices.
Combine egg and milk.
Dip each tomato slice in egg mixture and then into cracker crumbs.
Melt shortening and fry coated tomato slices.
Brown on both sides, turning once.
Season with salt and pepper.
