Prepare in Advance:
Place the chickpeas in a medium bowl, covering them with cold water by 1 inch.
Allow them to soak in the refrigerator overnight.
Drain and transfer to a deep earthenware casserole dish or Dutch oven.
Add the garlic, onion slice, bay leaf, salt, and enough water to cover.
Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours or until the chickpeas are tender.
Drain and remove the garlic and bay leaf.
Create the Onion Sauce:
Heat the olive oil in a medium skillet over medium heat.
Add the chopped onion and cook, stirring, for 1 minute.
Add the chopped tomato, reduce the heat to low, cover, and cook until the onion is soft but not browned, approximately 15 minutes.
Combine and Serve:
Fold the onion sauce into the tender chickpeas.
If using earthenware, serve the dish hot directly from the container, or transfer the contents to individual plates.
Savor the rich flavors and heartwarming essence of these Chickpeas in Sweet Onion Sauce, a dish that captures the essence of comfort and tradition.
