Instructions
In a small bowl, combine soy sauce, chile-garlic or curry sauce, rice vinegar, and toasted sesame oil.
Set aside.
Heat oil in a skillet over medium-high heat.
Add the cubed chicken and cook, stirring, until it is no longer pink in the center.
Add minced ginger to the skillet and cook for about 30 seconds.
Add snow peas and chopped green onions to the skillet.
Cook until the snow peas are just tender, about 2 to 4 minutes.
Pour the soy sauce mixture over the ingredients in the skillet.
Stir to coat well.
Stir in the broken cashews just before serving.
