Ginger Tamari Dipping Sauce combines gluten-free tamari with rice vinegar, fresh ginger, sesame oil, maple syrup, garlic, and black pepper. Use it with sushi, dumplings, tofu, rice, vegetables, or grilled meat.
Pour the gluten-free tamari into a small mixing bowl.
Add the rice vinegar, grated ginger, sesame oil, maple syrup, garlic powder, and black pepper.
Whisk until thoroughly combined.
Let the sauce stand for 5 minutes so the ginger can release its flavour.
Whisk once more before serving.
Use immediately as a dipping sauce, dressing, drizzle, or marinade.
Transfer leftovers to an airtight container.
Refrigerate for up to one week.

Recipe Notes
Grate the ginger finely so its flavour spreads evenly throughout the sauce. Whisk before every use because the ginger and black pepper naturally settle. Tamari contains considerable sodium, so additional salt is unnecessary.
Variations
Add chilli flakes, chilli oil, or sriracha for heat. Fresh lime juice creates a brighter sauce, while toasted sesame seeds add texture. Finely chopped spring onions or fresh coriander can be added immediately before serving.
Dietary Advice
Use tamari that is specifically certified gluten-free because not every soy sauce or tamari product meets gluten-free standards. This recipe contains soy and sesame and is therefore unsuitable for soy-free or sesame-free diets.
Wine Advice
A dry Riesling balances the salty tamari, ginger, and rice vinegar. A crisp Sauvignon Blanc also works well when the sauce accompanies vegetables, sushi, or grilled fish.
