Lightly grease an 8-inch baking dish with olive oil.
Whisk the yogurt and egg in a mixing bowl until smooth.
Stir in the feta cheese, parsley, dill, salt, and black pepper.
Place the zucchini in a steamer basket.
Add the mushrooms and leek when using.
Steam the vegetables for 7–8 minutes until just tender.
Drain the steamed vegetables thoroughly.
Arrange the steamed vegetables and chopped tomatoes in the prepared baking dish.
Pour the yogurt and feta mixture evenly over the vegetables.
Bake uncovered for about 15 minutes until the topping is set and lightly golden.
Allow the casserole to rest for 5 minutes before serving.
