Ingredients

peeled green tomatoes

–12 jalapeño peppers
chopped* (you may add or substitute your choice of hotter peppers if you wish)

lime juice

–¾ cup chopped cilantro

teaspoons
ground cumin

teaspoon
dried oregano

salt

ground black pepper
Instructions
Combine all ingredients in a large saucepan.
Bring to a boil over medium heat.
Boil gently for 10–15 minutes, or until slightly thickened.
Ladle into clean jars.
Process in boiling-water bath for 10 minutes.

*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
