Instructions
Preheat your grill or grill pan to medium-high heat.
In a medium bowl, combine the sliced nectarines, cilantro sprigs, thinly sliced red onion, jalapeño chile, lime zest, lime juice, and olive oil.
Season the nectarine salsa with salt and pepper to taste.
In a separate small bowl, whisk together the chili powder, ground hot paprika, 1 1/2 teaspoons salt, and 1 teaspoon pepper.
Pat the steaks dry and rub the spice mixture all over them.
Grill the steaks until grill marks form, and the steaks reach your desired doneness, approximately 5 minutes per side for medium-rare.
Allow the steaks to rest for 5 minutes.
While resting, grill the tortillas until they have a delightful char, about 30 seconds per side.
Thinly slice the rested steaks.
Assemble the tacos by dividing the sliced steaks, crumbled feta, and zesty nectarine salsa among the warm tortillas.
