Whisk together the olive oil, red wine vinegar, Worcestershire sauce, garlic, rosemary, oregano, salt, and black pepper in a large bowl.
Add the chuck roast and coat it completely with the marinade.

Preheat the grill to medium-low heat.
Remove the roast from the marinade and reserve the marinade for basting.
Place the roast on the grill.
Grill for 2 to 2½ hours, turning occasionally.
Baste with the reserved marinade several times during cooking.
Cook until the internal temperature reaches 88°C (190°F).
Transfer the roast to a cutting board.
Let it rest for 15 minutes before slicing and serving.
