Place the cheddar cheese, flour, butter, salt, garlic powder, and cayenne pepper into the bowl of a food processor.
Pulse until the mixture resembles coarse crumbs.
With the processor running on low speed, slowly add the ice-cold water.
Mix only until the dough comes together.
Remove the dough and shape it into a flat disc.
Wrap tightly in plastic wrap.
Refrigerate for at least 30 minutes.
Preheat the oven to 180°C.
Line a baking sheet with parchment paper.
Lightly flour the work surface.
Roll the dough to approximately 2 mm thickness.
Cut into 2.5 cm squares using a ruler and knife or cookie cutter.
Transfer the squares to the prepared baking sheet.
Use a toothpick to make one small hole in the center of each cracker.
Bake for 12 to 15 minutes until lightly golden.
