Honey Mustard Chicken Skewers
Chicken, vegetables and honey mustard: who needs a drive-through when this healthy, delicious meal can be ready in about 30 minutes with minimal prep.

skinless chicken thighs, cut into 3cm cubes

Low-Carb Honey Mustard

red onion
peeled and chopped into 3cm pieces

green capsicum
seeded and chopped into 3cm pieces

tablespoons
chopped fresh parsley
Instructions
In a medium bowl, combine chicken cubes and honey mustard.
Refrigerate covered for 30 minutes.
Preheat air fryer at 180°C for 3 minutes.
Skewer chicken and vegetables alternately on eight skewers and place half of skewers on a kebab rack.
Place rack in air fryer basket and cook for 12 minutes.
Transfer cooked kebabs to a large serving dish.
Repeat cooking with remaining skewers.
Garnish with fresh parsley and serve warm.
