Notes & Wine Advice
Recipe Notes
Use room-temperature cream cheese so it blends smoothly with the mayonnaise and sour cream.Drain the sauerkraut thoroughly before adding it to the dip. Too much liquid can make the finished mixture watery. The Swiss cheese is divided between the filling and topping. This gives the dip plenty of cheese throughout while creating a melted layer on top.Serve the dip immediately while hot and creamy. Raw vegetables work particularly well for dipping and keep the serving option low carb.
Wine Advice
A fresh Riesling pairs nicely with the salty corned beef, tangy sauerkraut, and creamy Swiss cheese. Its acidity helps balance the richness of the warm dip.
