Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and minced garlic.
Cook for approximately 5 minutes until softened.
Add the sliced zucchini.
Cook for 10 to 15 minutes until the zucchini is barely tender.
Remove the skillet from the heat.
Stir in the parsley, basil, kosher salt, and black pepper.
Pour the beaten eggs evenly over the zucchini mixture.
Return the skillet to medium-low heat.
Cover the skillet with a lid.
Cook for approximately 15 minutes until the eggs are completely set.
Sprinkle the grated Parmesan evenly over the frittata.
Cover the skillet again.
Cook for another 2 minutes until the cheese has melted.
Remove the skillet from the heat.
Let the frittata rest for 5 minutes.
