Instructions
Prepare the Marinade:
In a food processor or blender, puree all marinade ingredients (onion, scallions, garlic, thyme, salt, allspice, nutmeg, cinnamon, jalapeno pepper, black pepper, Tabasco sauce, soy sauce, vegetable oil).
Marinate the Wings:
In a large shallow dish, arrange the chicken wings in a single layer.
Spoon the marinade over the wings, rubbing it in.
You can use rubber gloves for this step.
Let the wings marinate, covered and chilled, turning them once.
Marinate for at least 1 hour or, preferably, overnight.
Baking:
Preheat the oven to 450°F (230°C).
Arrange the marinated wings in one layer on an oiled rack set over a foil-lined roasting pan.
Spoon additional marinade over the wings.
Bake in the upper third of the preheated oven for 30-35 minutes or until the wings are cooked through.
Serve:
Once cooked, serve the Jamaican Jerk Chicken Wings hot.
