For the fish

whole red snapper
about 900 g each
For the marinade / baste

green onions

garlic cloves

zest of 2 lemons

jerk seasoning

olive oil

soy sauce
Instructions
Rub inside the fish.
Mix remaining garlic, jerk seasoning, lemon juice, soy sauce and olive oil.
Preheat barbecue.
Place fish on grill.
Grill 8 to 10 minutes per side.
Baste frequently during cooking.
Remove from grill.
Let rest briefly.
Serve warm.
