Notes & Wine Advice
Serving Suggestions
Serve the sauce warm with lamb chops, roasted leg of lamb, lamb steaks, or grilled lamb skewers. It also works well with roasted potatoes, carrots, green beans, asparagus, and other oven-roasted vegetables.
Recipe Notes
Warm the sauce gently and do not let it boil. Excessive heat can cause the mustard and olive oil to separate. Whisk continuously and remove the saucepan from the heat as soon as the sauce is smooth and warm.
Variations
Replace thyme with rosemary, parsley, or mint. Add garlic for extra savoury flavour or cayenne pepper for heat. Maple syrup may replace the honey when a slightly darker sweetness is preferred.
Dietary Advice
Check that the Dijon mustard is certified gluten-free when preparing the sauce for someone with coeliac disease. This sauce contains honey and is therefore not vegan, although it is free from dairy, eggs, nuts, and soy.
Wine Advice
A medium-bodied Cabernet Sauvignon complements grilled or roasted lamb. A softer Merlot pairs well with the honey, lemon, mustard, and fresh thyme.
