Lemon–Scented Sugar Snap Peas
These sugar snap peas are just as delicious cold, so keep some in the refrigerator for a healthful snack.

fresh sugar snap peas
trimmed

tablespoons
butter or margarine
▢

garlic cloves
minced
▢

teaspoons
grated lemon rind
▢

tablespoon
fresh lemon juice
▢

teaspoon
salt
▢
½
teaspoon
freshly ground pepper
Instructions
Cook sugar snap peas in boiling salted water to cover 3 to 5 minutes or until crisp-tender.
Drain and plunge into ice water to stop the cooking process; drain.
Melt butter in a medium skillet over medium-high heat; add peas, and sauté 3 minutes.
Add garlic and remaining ingredients.
Sauté 2 minutes or until thoroughly heated.
