Preheat the air fryer to 390°F (200°C) for 3–5 minutes.
Combine the crushed macadamia nuts and breadcrumbs in a mixing bowl.
Season the coating with salt and black pepper.
Place the beaten eggs in a separate mixing bowl.
Dip each barramundi fillet into the beaten egg.
Let the excess egg drip back into the bowl.
Press each fillet into the macadamia and breadcrumb mixture.
Coat both sides evenly and press gently so the crust adheres.
Arrange the coated fillets in the air fryer basket in a single layer.
Leave space between the fillets for air circulation.
Cook in batches if necessary.
Air fry for 10–12 minutes until the crust is golden.
Check that the center of the fish reaches 145°F (63°C).
Transfer the cooked fillets to a clean plate.
Let the fish rest for 3 minutes.
Serve with lemon wedges.
