Instructions
Preheat the oven to 350°F (180°C).
Add the baby carrots, brown sugar, maple syrup, and melted nondairy butter to a baking dish with a lid and stir until evenly coated.
Cover and bake for 1 hour, stirring halfway through the cooking time.
Once the carrots are fork-tender and lightly caramelized, remove from the oven and let rest for 5 minutes before serving.
