1lb450 g pork shoulder, cut into chunks
1medium oniondiced
2carrotspeeled and sliced
2medium potatoespeeled and cubed

1can14.5 oz / 410 g diced tomatoes
2tablespoonsolive oil
1teaspoonground cumin
1teaspoonsmoked paprika
1tablespoonfresh thymechopped
1tablespoonfresh rosemarychopped
¼cupdry white wine
3cupschicken broth

Instructions
In a large bowl, combine the olive oil, garlic, cumin, smoked paprika, thyme, rosemary, salt, and black pepper.
Add the chicken and pork and toss until evenly coated.
Cover and refrigerate for 2 hours to marinate.
Heat a Dutch oven over medium-high heat.
Brown the marinated chicken and pork in batches for 5 to 7 minutes, then transfer to a plate.
Add the onion and carrots to the same pot and cook for about 5 minutes until softened.
Stir in the potatoes, diced tomatoes, white wine, and chicken broth.
Return the browned chicken and pork to the pot.
Bring to a gentle simmer, cover, and cook for 1½ hours until the meat is tender.
