Instructions
Prepare the Marinade:
In a bowl, whisk together olive oil, soy sauce, Dijon mustard, honey, minced garlic, dried rosemary, dried thyme, smoked paprika, salt, and pepper.
Marinate the Pork Loin:
Place the pork loin in a large zip-top bag or shallow dish.
Pour the marinade over the pork, ensuring it's evenly coated.
Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, turning the pork occasionally to marinate all sides.
Preheat the Oven:
Preheat the oven to 375°F (190°C).
Roast the Pork Loin:
Remove the pork loin from the marinade and place it on a roasting pan or oven-safe dish.
Roast in the preheated oven for approximately 30-40 minutes or until the internal temperature reaches 145°F (63°C).
Baste the pork with the marinade occasionally during roasting.
Rest and Slice:
Allow the pork loin to rest for 10 minutes before slicing.
Garnish with chopped fresh parsley.
Serve Warm:
Serve the marinated pork loin slices warm, accompanied by your favorite side dishes.
