Instructions
Preheat your oven to 350°F.
Brush the bread slices with a bit of olive oil.
Place them on a baking sheet and bake until they're lightly browned, turning once to ensure even toasting.
On each toasted bread slice, place a lettuce leaf, followed by a slice of hard-boiled egg, a slice of ripe avocado, and an anchovy fillet.
Garnish each canapé with a strip of jarred piquillo pepper for a touch of color and added flavor.
