Mediterranean Chicken Skillet with Garlic Herbs and Tomatoes
Juicy chicken cooked with tomatoes, garlic, and herbs creates a bright Mediterranean-inspired skillet dinner that’s both satisfying and easy to prepare.
Season the chicken with salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for about 5–6 minutes per side until golden, then remove from the skillet.
Reduce heat to medium and sauté the garlic until fragrant.
Add the cherry tomatoes and cook until they begin to soften.
Pour in the chicken broth and stir in oregano, thyme, and red pepper flakes.
Return the chicken to the skillet and simmer until it reaches 165°F internally.
Stir in lemon juice, olives, and parsley.
Sprinkle feta over the top just before serving.
Notes & Wine Advice
Notes
Use high-quality olive oil for the best flavor, as it plays a central role in the sauce. If you prefer a slightly thicker consistency, allow the sauce to reduce briefly before returning the chicken to the skillet. Fresh herbs can replace dried ones for an even brighter finish.
Wine Advice
A crisp Sauvignon Blanc pairs beautifully with the herbs and lemon, while a dry Rosé complements the tomatoes and feta without overpowering the dish.
