1/2cupMarsala Wine
1/4cupCooking Sherry
Instructions
Combine the flour, salt, black pepper, and oregano in a mixing bowl.
Coat each tofu steak evenly with the seasoned flour mixture.
Heat the olive oil in a large frying pan over medium heat.
Add the tofu steaks and cook for 3 to 5 minutes per side, until lightly golden.
Add the sliced mushrooms, Marsala wine, and cooking sherry.
Cover the pan and simmer for 10 minutes.
Turn the tofu halfway through cooking and gently stir the mushrooms to prevent sticking.
Remove the lid during the final few minutes if the sauce needs to reduce and thicken.
Spoon the mushrooms and Marsala sauce over the tofu steaks and serve hot.

Press the tofu thoroughly before coating it with flour. Removing excess moisture helps the flour adhere and allows the tofu to develop a golden crust. Allow the sauce to simmer uncovered for a few extra minutes if you prefer a thicker consistency.
Variations
Add garlic, shallots, fresh thyme, or parsley to the mushrooms for extra flavour. Cremini mushrooms can replace button mushrooms for a deeper, earthier taste.
Storage
Store leftover tofu, mushrooms, and sauce together in an airtight container in the refrigerator for up to three days. Reheat gently in a frying pan, adding a small splash of water if the sauce has become too thick.
Wine Advice
Serve with a dry Marsala to echo the flavours in the sauce. A light Pinot Noir is another excellent choice with the earthy mushrooms and golden tofu.
