Crispy mustard and Parmesan crumbed chicken drumsticks served with golden baby potatoes and green beans. Greek yogurt, Dijon mustard, herbs and lemon create a flavourful coating for this easy air fryer dinner.
Toss the baby potatoes with 2 teaspoons of the olive oil and season with sea salt and black pepper.
Cook the potatoes in the air fryer for 20 minutes, tossing halfway through, until tender and golden.
Combine the Dijon mustard and Greek-style yogurt in a large bowl and season with sea salt and black pepper.
Combine the Parmesan cheese, breadcrumbs, dried mixed herbs and lemon zest in a shallow bowl.
Drizzle 1 teaspoon of the olive oil over the breadcrumb mixture, season lightly and toss to combine.
Dip the chicken drumsticks into the yogurt mixture, then coat evenly in the breadcrumb mixture.
Remove the potatoes from the air fryer and keep warm.
Arrange the chicken drumsticks in the air fryer basket and air-fry at 180°C for 20 minutes, turning halfway through.
Return the potatoes to the basket with the chicken and cook for a further 5 minutes to heat through and crisp.
Toss the green beans with the remaining olive oil and season with sea salt and black pepper.
Cook the green beans in a frying pan over medium-high heat for 5 minutes, until lightly browned.
Squeeze the lemon juice over the green beans and serve alongside the chicken and potatoes.
Notes & Wine Advice
Serving Advice
Serve the Mustard Parmesan Chicken hot with the golden baby potatoes and lemony green beans. The potatoes make this a complete Main Course, while the fresh beans provide a lighter contrast to the crisp Parmesan coating.
Storage Advice
Allow leftover chicken, potatoes and green beans to cool before storing them in airtight containers in the refrigerator for up to 2 days. Reheat the chicken and potatoes thoroughly in the air fryer to help restore their crisp texture. Browse our Store Food recipes for more storage-friendly dishes.
Wine Advice
A fresh Chardonnay pairs particularly well with this chicken. Its rounded character complements the Parmesan and creamy yogurt coating, while its freshness works nicely with the Dijon mustard and lemon.
