Oyster Fritters

Ingredients

8-ounce containers Select oysters, rinsed and drained
Instructions
Combine flour, salt, and pepper in a medium bowl.
Combine water, butter, and egg yolk in a small bowl, beating well with a fork.
Gradually add egg mixture to dry ingredients, stirring until blended.
Beat egg white until soft peaks form; fold into batter.
Pour oil to a depth of 2 to 3 inches into a Dutch oven; heat to 375°.
Dip oysters in batter; fry in batches in hot oil 2 to 3 minutes or until golden, turning once.
Drain on paper towels.
Serve immediately.
