Instructions
In a large ceramic dish, combine water, wine, and salt.
Add the pork cutlets and refrigerate for 1 hour.
In a shallow bowl, mix flour, shallot powder, porcini powder, salt, and black pepper.
In another bowl, whisk eggs with yogurt and mustard.
In a third bowl, place the crushed tortilla chips.
Dip pork cutlets in the flour mixture, then in the egg mixture, and finally in the crushed tortilla chips.
Spritz the cooking basket with cooking oil.
Place breaded pork cutlets in the basket and cook at 395°F for 10 minutes.
Flip the cutlets and cook for an additional 5 minutes.
Serve warm.
