Potatoes with Shallots, Goat Cheese, and Herbs

Garnishes (optional):

Instructions
Place the potatoes in a large pot and cover them with water.
Bring the water to a boil and cook the potatoes for about 35 minutes or until they are tender.
Drain the potatoes and allow them to stand for 5 minutes.
Set them aside.
In a large skillet, heat the olive oil over medium heat.
Add the finely chopped shallots and sauté them for about 4 minutes or until they become tender and golden.
Set them aside.
In a small saucepan or by using a microwave, heat the milk until it becomes hot (approximately 2 minutes on high in the microwave).
Set it aside.
Mash the drained potatoes using a potato masher.
Add the sautéed shallots, goat cheese, finely chopped fresh thyme, parsley, chives, salt, and freshly ground pepper to the mashed potatoes.
Pour in the hot milk as well.
Mash everything together until well combined, keeping the mixture slightly chunky for texture.
If desired, garnish the creamy mashed potatoes with fresh thyme sprigs and fresh parsley sprigs before serving.
