Instructions
Use a meat mallet to flatten the pork slices; set aside.
In a small bowl, combine the beaten egg and milk, blending well.
In a separate bowl, combine the finely crushed saltine crackers, all-purpose flour, salt, and pepper.
Dip each pork slice into the egg mixture, ensuring it is well-coated, then press it into the crumb mixture until evenly coated.
Heat about 1/2 inch of oil in a skillet over medium-high heat.
Add the coated pork slices to the hot oil and fry until they are deep golden on both sides and are no longer pink in the middle, turning as needed.
Remove the fritters from the skillet and drain on paper towels.
Serve the Quick and Crispy Pork Fritters hot.
