Roast Lamb Rack with Lemon

1 pounds rack of lamb

grated lemon rind 1/4 lemon

beaten
▢
60 g 0 3 pound dry breadcrumbs sourdough 1 tsp. grated garlic up to 2 fat cloves of garlic a pinch of salt to taste
Instructions
Heat the Air Fryer0 degree Celsius.
Season lamb rack with salt and freshly milled black pepper.
Set aside.
Using large bowl, Combine dry breadcrumbs, grated garlic, 1/2 tsp salt, cumin seeds, cumin, oil and grated lemon rind.
In a separate large bowl, beat an egg with a fork.
Dip the lamb rack into the egg and coat with the spiced breadcrumbs, forming a crust.
Add the coated lamb rack in the Basket and slide the basket into the Air Fryer.
Set the timer minutes.
After 25 minutes, increase the temperature0 C and set the timer for another 5 minutes.
Move out the meat from the Air Fryer and leave it to rest, covered with aluminium foil for 10 minutes before serving.
